Tupelo honey is a light golden amber-colored honey with a greenish cast that tastes delicious, buttery, and stands out from other types of honey. Tupelo honey comes from a tree that grows only in wet swampy soil which is generally found in Florida. The  Apalachicola, Chipola, and Choctawhatchee river systems of creeks and backwaters are the honey-producing regions of Florida. The other region popular for the growth of tupelo honey is the Okefenokee Wildlife Refuge in Georgia. Both the regions are classified as Southern Cypress swamp and it is also known as swamp honey among locals. 

The most special and unique thing about tupelo honey is it does not crystallize because of its specific ratio of sugars which makes it consumable for diabetic people. It is also known as monofloral honey as it is primarily made from the nectar of only one type of flower. 

What is Tupelo Honey?

Tupelo honey comes from Nyssa Ogeechee which is one of the tupelo tree species and is abundantly situated in northern regions of Florida and southern regions of Georgia. The production process is not easy, beehives need to move to groves of Tupelo trees which grow along four rivers around these two regions. The trees blossom for around three to four weeks, so beekeepers position their hives near floats, platforms, or river swamps to protect them from getting hit by flood.
