Of course, before we get to that part, there’s always the viewing of the cake. Often the cake is already at the reception hall, although on occasion you actually get there in time to see someone putting a cake together. There are traditional cakes where you walk in and see a flat cake, and those are find and tasty also. But what really makes a wedding cake spectacular is when you see a constructed cake, one with some kind of style and flair, potentially something different that makes you gasp, makes your mouth water, and makes your brain say “how did they do that?”

One such wedding cake maker is the business known as She Takes The Cake. The owner, Jennifer Comfort, has been making stylish cakes, mainly for wedding, for over 10 years. She started out making birthday cakes, but the natural move to wedding cakes came quickly. She considers herself a cake artist, and judging by some of the styles of cakes she has, you’d have to agree. Her background is actually in graphic design, which explains how she comes up with the concept for her cakes.

Something many people don’t know is that not all wedding cakes are covered in what we believe is traditional frosting. Instead, often they’re layered in something known as “fondant”, which is more thick and pliable; bakers can actually pick it up and mold it. Also, it’s solid enough for graphic designs to be put on it, as well as other accoutrements. If you take a look at some of the designs on some of these cakes, you’ll realize that there’s no way these designs would have shown up properly on regular frosting.

Wedding cakes, in layers, take a long time to make and construct, but the construction can’t begin until the cake is at the location. That’s because there’s often no way to transport layers of cake, let alone keeping it stable and safe so it’ll still be together when it arrives at its destination. This makes the wedding cake baker an integral part of wedding day staff, but gives the rest of us something to watch while we’re waiting for the bride and groom to arrive.

It’s amazing how creative wedding cake makers can be. But of course none of it matters if the taste of the cake doesn’t equal its look. Lucky for someone like me, I’ve had few wedding cakes that haven’t passed the muster; thank goodness.
