Have you ever wonder how and where special quality of dried fish are made? Lot's of us thought that all dried fish were sun dried in land or in seashore. Even I at first thought it was, but I was wrong until I found out that the best quality of dried fish were sun dried in the middle of the sea by our brave fishermen on their fishing vessel.
I realize that there's a big difference base on taste, quality and texture of dried fish sun dried in the middle of the sea than dried fish sun dried in land. I am not saying that all dried fish sun dried in lands are not in quality and delicious, I am just explaining and base it on my experience.
One of the main reason why I choose and love to eat dried fish made in the middle of the sea because I am sure that the fish they use to make a special quality of dried fish are fresh from the hooks. The process is all natural. Freshly caught fish will be process right away while the boat is sailing while catching more fish. It is not the typical dried fish which you see in the market today. It is sun dried in the middle of the sea to avoid pest like flies that produce worms and destroys the quality of dried fish. Those that are sun dried in land that needs to add extra amount of salt to prevent the dried fish in developing molds resulting of too much salty taste. Unlike those that are sun dried in the sea, all you get is the genuine fish taste and not too salty.
"Techniques and Process of Making Quality Dried Fish"
1. At the moment they caught fishes, they carefully segregate the fish (they want to dried) into a container to assure its fresh quality.
2. Slice the fish from head to the back of the fish and into the tail.
3. Remove the guts and gills, wash using sea water and gently scrub its flesh to remove any debris and to make sure that there are no blood stains left.
4. Put it into a container loaded with salt and set a side for 18 to 24 hours.
5. After 18 or 24 hrs, wash the fish using sea water only and it is ready for sun drying. It usually takes 2 to 4 days of sun drying depends on the weather.
To make sure that the dried fish are on it's top quality, fishermen carefully guard and prevent it from being wet by rain or sea water until the fish is totally dried. Because it will result into a poor quality of dried fish and sometime if you eat poor quality of dried fish, you will feel itchiness on your tongue and a little bit of dizziness.
