I live alone so for me cooking a meal for just me seems like a daunting task. I hate preparing recipes and cooking some elaborate meal for just me. Trying to eat healthy on top of that, well that's near impossible. I was told that if I did some planning at least a week ahead of time, I could actually be living a more carefree life with a menu of versatile meals that won't take me hours in the kitchen to prepare and only five minutes to eat it.
Any kind of recipe that you come across can always be adapted to fit your needs, as in a meal for one. Since I work during the week, I take Sunday as my day for grocery shopping and meal preparation for the whole week. I cook three to four different meals and scale down the recipe's serving size to two. This way, I can eat one serving of each recipe twice in one week (or you can do seven separate recipes for each day of the week if you'd like). After preparation for each recipe, I divide by two in separate containers and store each in the freezer. Every morning before work, I take out a meal and allow defrosting all day. By the time I get home, my frozen meal is ready to heat up and eat. It's so delicious because you made it yourself and you know it's healthy.
If you prefer not spending hours in the kitchen preparing your meals all week or if your freezer can't hold all those meals, you could just make a recipe for two days ahead instead of seven. You would spend a little more time in the kitchen during the weekdays but at least your Sunday afternoon's would be free. One of my favorite recipes is Orange Chicken. I take a boneless, skinless chicken breast, put it in a baking dish and drizzle in some extra virgin olive oil and garlic. Then, I place it in the oven and bake for about 20 minutes. While I'm waiting for the chicken, I take a pan and squeeze the juice of a medium sized orange and cook it over medium heat until it bubbles. Then, I add some white wine or orange-flavored liqueur to the orange juice and cook it until half evaporates. When the chicken is done, place it on a plate and pour the warm glaze over the meat. Top it off with a nice salad and dinner role and you've got a great meal fit for a working woman.
Dessert is also part of the meal right, so let's not skimp on those recipes either. Here is one of my favorites: I melt 1-2 ounces of white chocolate in a double boiler over very low heat, or very carefully in a microwave, being extra careful not to allow it to burn. Once melted I allow the chocolate to cool slightly, but not to where it re-hardens. Next I stir in 1/4-1/2 of a cup of heavy cream (relax; you won't be eating this every single day.) After stirring the mixture completely I then pour it over any fruit of your choice. I personally love it over strawberries. It's so yummy. For the glazed chicken meal, try segments of orange and sliced strawberries too.
