For some people, especially people from other part of the world has some misconception about our Filipino food, maybe because of cultural differences that makes individual unique from each other. I really cannot blame them as we Filipino sometimes also have cultural shocks with regards with their culinary recipe. I have a visitor once from other country that are so surprised when he discover and finds out that Filipino cooks field snail (kuhol) for food or appetizer. For some it could be an exotic food but for us it is just a regular food. But for the reason that I cook snail for our pulutan (appetizer when drinking beer)I convinced him to give it a try and I am so glad that started to like so much. Kilawin is also another recipe gives culture shock and amazed people from other country, It happens when a Caucasian friend of ours invite us to have a drink while snow fishing, our group brought some vinegar, ginger and other ingredient for kinilaw but we knew that we could catch fresh fish which is good for kilawin, we caught several wall eye and started to prepare kilawin and he was so surprised the way we eat uncooked fish marinated in vinegar, I try to convince him to try and explain that Asians are used for eating fresh (raw) seafood’s. Japanese are known for their sushi and Korean also eat fresh (live) octopus.
But there are times that they also pepare food the way Filipino cook, I was invited by a Serbian friend in a fund raising for Orthodox Church and I was shock when he gave me a kilo of lechon baboy as our food, he told me also that roasted pig is one of the most popular food in their country. To my surprise I almost consume the whole thing as I miss lechon so much but they don’t have sauce that we use in Philippines. As I noticed, there are lots of Mexican and south American nation food that are comparable with Filipino food maybe because of the influences of Spanish or Portugal to their country which also has big influences with our cooking style, I taste some of their food particularly Paella and Arroz ala cubana which is also a recipe for special gathering in our country.
Cultural differences in every nation especially when it comes for preparing food is inevitable as people in every country live in different situation and environment. What normal to us could be unusual to other, but what common for everybody is the understanding and respect that everybody deserves even people has lots of cultural differences.
